Thank you all so much for your helpful troubleshooting tips, suggestions, and configs.
The issue looks to be resolved. While combing through the config on my Unifi switches and APs, I noticed a couple of inconsistencies related to the 'Native VLAN' on my trunk ports. I also recently replaced one of my U6-Pros that died and forgot to change the network setup on it. Specifically, my management VLAN was set as the native (untagged) VLAN, where typically I only allow tagged traffic through the trunk ports.
I ended up completely resetting the switch configs and starting again from scratch. In hindsight, I wish I had kept a copy of the configs so that I could retrospectively understand exactly what part of the config would have been causing the trouble.
In retrospect, I believe that the issue was only occurring on one of my two APs (ie. the newly configured one). This explains why my packet captures always failed to show any anomaly as I was always connected to the "good" AP.
I sure have learnt plenty through this process and wanted to thank you all again for your time.
