While I'm not quite sure why dig doesn't always work, I did figure out the main problem I was trying to solve which was I needed pihole to show the hostnames. This post viewtopic.php?t=119469 and which links to this script https://github.com/tonoitp/mikrotik-dhcp-to-dns solved my issue.
